Homemade Cashew Marzipans- Recipe, Trials & Errors!

Marzipans are absolutely irresistible! Only after several years did I know that it's simply a mix of cashews and sugar!

I could not figure a clear recipe online, so there were MANY trial and error batches! Although it always TASTED fantastic, I had trouble getting them shaped well! Either it would turn out too hard and crack or too soft to do anything other than balling them. I tried  egg v/s eggless, little milk v/s little more milk, butter v/s no butter, moulds v/s cookie cutters! Every attempt left me befuddled, cuz I just couldn't get the shapes right!

I guess getting the Marzipan shapes right is akin to baking a cake- the measurements and cooking time have to be EXACT.

This is what I did in my last attempt, they turned out well! 

150 gms of powdered cashews
+ 75 gms of icing sugar
+ 3 tablespoons full fat milk
+ 2 drops of almond essence
+ few drops of food coloring
+ tiny blob of butter


Mixed everything and stirred continuously in a pan over low heat. When it kinna becomes a ball, I.e. In around 5 mins, poured it over a buttered cutting board. With the same spatula, patted it flat. In about another 3-4 mins, when it was cool enought to touch, I rolled it flat with a buttered rolling pin (not too thin!). Then sprinkled some cake decoration beads and flattened it once more.

Then kept it in the fridge to cool off some more, for about 5-10 mins, then with cookie cutters cut off some Christmas trees, bells, stars etc. Then put it back in the fridge for a couple of hours to harden further.

P.S: A BIG P.S!! I am still on a no-sugar diet! So all the tasting and sampling were done by people around me. YES, believe it or not I didn't take a single bite of something that used to be my absolute favorite!
